Lake District Special Reserve Cheddar This particular cheese is selected out by the master cheese grader who visits the site weekly to monitor quality and ensure that only premium cheese goes into this brand. Lake District Special Reserve cheddar is selected out from much of the cheese due to it's unique robust and well balanced acidity, salt and moisture content. This enables the cheese to slowly mature for up to 2 years and develops it's distinctive deep rich and rounded flavour along with it's slightly brittle but creamy texture.
